Our grapes are handpicked and transported to the cellar in small lug boxes. On arrival at the winery, the bunches undergo sorting on a vibrating table, followed by de-stemming, then further hand-sorting to remove any remaining stems. This attention to detail ensures that only the highest quality berries are lightly crushed into a satellite tank which is hoisted and opened above stainless steel fermentation tanks. A three to four day cold soak is followed by slow and gentle fermentation. All our wines mature in French oak barrels. After bottling there is further bottle maturation before the release of our exciting wines.
