Destiny Shiraz 2012
Voluptuous, intense, sensuous and well-balanced. Complex and layered with mouth filling rich, ripe red and black berries with hints of pepper and spice. The tannins are supple and all the components of the wine are in harmony. The finish is long and savory.
The grapes were handpicked and transported to the cellar in small lug boxes. On arrival at the winery, the bunches underwent sorting, followed by destemming, then further hand- sorting of the berries to remove any remaining stems and unripe or imperfect fruit. Fermentation was slow and gentle. The skins were basket-pressed and the wine matured for 18 months in 2 new French oak barrels and 1 second-fill French oak barrel.
Each bottle is hand labelled and the labels are hand numbered and signed. Our family heirloom ring is then pressed into the gold wax seal which adorns the front label. This time consuming process further emphasises the passion we have to create the Destiny.

Having finally had our new house registered in our name my wife and I decided to celebrate the occasion with a good wine, and what better than your 2003 Destiny, bottle number 403 of 970. I was rather reluctant to pull the cork as the hand labelled bottle had a special place in my cellar, and in my heart. But the cork was eventually pulled, really lived up to our expectations. Absolutely superb, it had made the most of its years in the bottle and was probably the epitome of what a shiraz should taste like with its smokey deep flavours and bouquet. Congratulations on a superb wine, now I will have to come by to buy another bottle but, after tasting the first, I doubt that I can wait another ten odd years before pulling in cork!
